i made 홍샤오로우 red cooked pork but pork quality was not so good. male pig is much stinkier and inferior to female pig meat. taste is okay but this is one of those speed issue cooking i always mess up a tiny bit and regret. in this case caramel sauce didnt cover pork fully, isufficiently strog flavour and directly added green pepper rther than separately stirfry and add at end. sigh
